Pizza secrets behind the kitchen counter:

The secrets of the authentic Italian pizza

Italian pizza is synonymous with culinary perfection worldwide. Whether it’s a simple Margherita or a “work of art” with rich toppings, every element of an authentic Italian pizza requires careful attention.

But what makes it truly authentic? At Oinos we like to think of pizza making as an art, where traditional basics meet modern techniques and the best ingredients. The aim is to make every bite a perfect taste experience.

There’s no authentic Italian pizza without the perfect pasta

Italian pizza dough is unique, light, airy and crispy, yet soft on the inside. So it’s not just the taste that’s special, it’s also easy to digest. It doesn’t have that heavy feeling after eating that other pizzas can give you.

The natural fermentation process is key to making authentic Italian pizza pastas. At Oinos we follow this tradition. The real secret lies in the rigorous selection of Italian flours.

We use only the highest quality, Italian-origin, fine flours to make our pizzas. All this is essential to achieve the perfect texture and flavour.

For toppings, quality, not quantity, prevails

The magic of authentic Italian pizza lies not in the quantity of toppings, but in their quality. Rather, you need few, but carefully selected toppings.

At Oinos, for example, we use San Marzano tomatoes, which come from the Naples area and have a very sweet, rich flavour. This tomato is the basis of the pizza sauce that distinguishes Italian pizza from other pizzas around the world.

Cheese is an equally important ingredient. Only fresh mozzarella is used on a real Italian pizza. This cheese is not only creamy and tasty, but it melts perfectly on the pizza and makes every bite heavenly.

Let’s not forget the harmony of the toppings. The traditional a Margherita, for example, is made up of three simple ingredients – tomato, mozzarella, fresh basil – yet offers a perfect balance of flavours.

Baking technique is also an essential component

Authentic Italian pizza cannot be baked in just any oven. It’s the wood-fired oven that helps to add the finishing touch. At Oinos, we bake our pizzas in a traditional wood-fired oven.

The special oven not only ensures high temperatures, but also gives the food a unique, slightly smoky flavour. The temperature of 400-500 degrees Celsius also allows the pasta to be baked quickly, while remaining crispy on the outside and soft on the inside.

The ‘work of art’ baked in this way takes on a unique golden brown colour and the cheese melts perfectly onto the dough. You won’t find this unique flavour anywhere else – it’s what makes pizza truly authentic and special.
